Coconut Date Bars

Heading out for tea or coffee with a friend is awesome. It means you’re probably going to slow down and unplug for a while on top of spending some quality one-on-one time with somebody important to you. Awesome. Because we all know unplugging is a healthy way to manage stress and gain some fresh perspective on life.

What’s not so healthy? Coffee-shop snacks. They’re usually loaded with sugar, refined flour, damaged oils and synthetic flavorings. But these Healthy Pecan Bars have a LOT in their favor:

Good Fats

We’ve talked about the amazing benefit of coconut before. From the easily digested fats, to its anti-inflammatory properties there’s no reason not to load up on the coconut. Pecans are so sweet and smooth in flavor and are delicious in the recipe. On top of the taste factor, pecans contain tons of nutrients: heart-healthy fats, protein, flavanoids, vitamin E and fiber.

Natural Sugar

Instead of 20-30 grams of white sugar found in commercial bars, pecan bars use only a few dates instead. Where white sugar contains just that – sugars, dates are slower to digest, contain fiber and numerous minerals including Iron and Zinc. The flavor of dates also tastes great with pecans.

Cacao

Cacao, the raw, unprocessed form of cocoa beans, has 4 times the anti-oxidant status of your average chocolate bar. Even without the sugar, cacao contains something called anandamide – known as the bliss molecule. Basically, pecan bars will make you happy if you eat it.

Sea Salt

You see salt added to a lot of sweet recipes, and it’s no mistake. Salt actually brings out the flavors in both sweet and savory dishes. Sea salt, like Himalayan or Celtic, also adds more than 50 trace minerals that are missing from our soil and from conventional produce.

Ingredients
  1. Pecans - 1 cup
  2. 1 tbsp Coconut oil
  3. 1/2 tsp Sea salt
  4. 1 tbsp Chia seeds, freshly ground OR 2 tbsp pre-ground Chia seeds
  5. 1 tbsp Cocoa
  6. 1/2 tsp Cinnamon
  7. 8 Dates
  8. 1/4 cup Almond Milk
Instructions
  1. 1. Combine all ingredients in a food processor and pulse until evenly crumbled.
  2. 2. Press into a parchment lined 8 X 8 pan and chill for 1 hour.
  3. 3. Cut into squares or rectangles and refrigerate.
Notes
  1. For presentation, coat squares in shredded coconut or cocoa powder, top with chopped pecans or shaved dark chocolate.
