Ingredients
  1. 20-30 large, uncooked tiger shrimp, deveined and skeleton removed
  2. 2/3 cup coconut flour
  3. 1/3 cup shredded coconut
  4. 1 tbsp garlic powder
  5. 1 tsp sea salt
  6. 1 pastured egg
  7. 1/2 cup coconut oil
  8. 3 tbsp melted ghee
  9. juice of 1/2 lemon
  10. 1 cup salad greens
Instructions
  1. 1. Ensure that the shrimp are dry.
  2. 2. Toast the coconut flour, shredded coconut, garlic powder, and sea salt in a cast iron pan for 2 minutes or until fragrant. Stir frequently.
  3. 3. Crack the egg into a shallow dish and beat with a fork until mixed.
  4. 4. Dip the shrimp into the egg wash, and then dredge both sides with the toasted coconut mix.
  5. 5. Melt the coconut oil until melted and hot in the cast iron pan and cook the shrimp for 1-2 minutes per side.
  6. 6. Line a serving dish with the salad greens. Put the cooked shrimp on top of the greens.
  7. 7. Mix the melted Ghee with the lemon juice and a pinch of sea salt. Drizzle this on top of the shrimp.
  8. Yum!
